- 1 tbsp vegan butter or coconut oil
- 1 green apple, halved and de-seeded
- 1 medium onion, diced (optional)
- 1 carrot, halved
- 4 medium ripe tomatoes, halved
- 1 tbsp stock powder
- 3 cups water
- Salt and pepper to taste
Instructions
- In a heavy-bottomed saucepan, heat your choice of oil over medium heat. Sauté the diced onions (if using) for about 2 minutes until translucent.
- Add the halved tomatoes along with salt. Cook until they soften, stirring occasionally.
- Once soft, add the halved carrot and green apple. Pour in enough water to cover the vegetables completely.
- Allow the mixture to simmer until all vegetables are tender. Adjust with more water and stock powder as needed.
- Once cooled slightly, transfer everything to a blender or food processor and blend until smooth. Strain if desired for extra creaminess.
- Season with black pepper or red chili flakes to taste before serving hot.
