  • 5 ounces whole wheat French bread (cubed)
  • 1/2 medium onion (minced)
  • 1 large stalk celery (minced)
  • 4 fresh sage leaves (minced)

  • 3/4 cup chicken broth
  • 2 tablespoons dried cranberries (chopped)
  • Salt and pepper to taste
  • 1/2 tablespoon butter
  • 1 large egg (beaten)
  • 2 cups chicken broth for gravy
  • 2 leaves fresh sage for gravy
  • 3/4 teaspoon poultry seasoning for gravy
  • 1/4 cup all-purpose flour for gravy

Instructions

  1. For the stuffing: Sauté minced onion and celery in butter until soft, then stir in sage, parsley, bread cubes, seasoning, salt, pepper, chicken broth, cranberries, and beaten egg; mix well.
  2. Preheat oven to 350°F (175°C). Place turkey breast skin-side down on a cutting board and pound to an even thickness.
  3. Spread stuffing evenly over the turkey and roll tightly. Secure with kitchen twine or toothpicks.
  4. Place in a roasting pan, brush with softened butter, sprinkle with salt, and cover with foil.
  5. Roast for about 60 minutes or until it reaches an internal temperature of 165°F (74°C).
  6. For the gravy: Combine broth and seasoning in a saucepan; whisk in flour until thickened.
