  • 3/4 cup cold butter, cut into cubes
  • 1 cup light brown sugar, packed
  • 1/4 cup granulated sugar
  • 1 large egg, cold
  • 2 teaspoons pure vanilla extract
  • 4 ounces semi-sweet baking chocolate, chopped
  • 1 1/8 cups semi-sweet chocolate chips, divided
  • 3/4 cup coarsely chopped walnuts
  • Sea salt, optional

Instructions

  1. Preheat your oven to 400°F and line cookie sheets with parchment paper.
  2. In a bowl, whisk together all-purpose flour, cake flour, cornstarch, baking powder, baking soda, and salt.
  3. In a stand mixer bowl, cream cold butter with light brown sugar and granulated sugar until smooth. Add in the cold egg and vanilla extract.
  4. Gradually mix in the dry ingredients along with chopped chocolate and walnuts until just combined.
  5. Scoop dough into balls using a large cookie scoop and place on prepared sheets.
  6. Bake for 12-13 minutes until edges are golden brown. Cool on wire rack.
