  • 1 1/2 cups unsalted butter, cold
  • 24 chocolate batons
  • 1 large egg
  • 2 teaspoons water

Instructions

  3. In another bowl, whisk flour, sugar, and salt; then gradually add to wet ingredients.
  4. Knead dough until smooth (8-10 minutes), adding flour as needed.
  5. Wrap and refrigerate overnight.
  6. Prepare the cold butter layer between parchment and chill for an hour.
  7. Roll out chilled dough into a square and incorporate the butter.
  8. Fold the dough three times and refrigerate again for at least eight hours.
  9. Shape croissants, fill with chocolate batons, and let rise for an hour.
  10. Brush with egg wash and bake at 425°F for about 18-22 minutes until golden brown.
