  • 1/4 cup oat flour
  • 1/4 tsp salt
  • 1/3 cup melted refined coconut oil
  • 1/4 cup pure maple syrup
  • 1 tsp vanilla extract
  • 1 cup berries, fresh or frozen
  • 1 1/2 tbsp pure maple syrup
  • 1 tbsp water
  • 1/2 tsp cornstarch
  • 1/2 cup oat flour
  • 1/4 cup oats
  • 2 tbsp almond flour
  • 1/4 cup melted refined coconut oil
  • 1 tbsp pure maple syrup
  • 1/2 tsp vanilla extract
  • pinch of salt

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. For the base layer, mix almond flour, oat flour, and salt in a bowl. Add melted coconut oil, maple syrup, and vanilla extract; mix well. Spoon into a greased 8×8 baking dish and flatten.
  3. For the berry layer, heat berries with maple syrup and water in a pot until softened. Mash slightly, stir in cornstarch, then simmer until thickened. Cool in the fridge.
  4. For the crumble topping, combine oat flour, oats, almond flour, and salt in another bowl. Stir in melted coconut oil, maple syrup, and vanilla extract until mixed.
  5. Assemble by pouring the berry mixture over the base layer and topping with crumble. Bake for 25 minutes until golden brown. Let cool completely before slicing.
