  • 2 1/2 cups all-purpose flour

  • 2 tablespoons olive oil

  • 3 cups fresh spinach
  • 2 cloves garlic, minced
  • 1/2 teaspoon dried oregano
  • 1/4 teaspoon red pepper flakes (optional)
  • 1/2 cup marinara sauce

  • 2 tablespoons nutritional yeast (optional, for topping)

Instructions

  1. Activate yeast by mixing it with warm water and sugar; let sit until foamy.
  2. In a large bowl, combine flour and salt; add the yeast mixture and olive oil, knead until smooth. Let rise for 1 hour.
  3. Caramelize sliced onions in olive oil over medium-low heat until golden brown. Add garlic and spinach; cook until wilted. Season with oregano, salt, and pepper.
  4. Preheat oven to 375°F (190°C). Roll dough into a rectangle, spread marinara sauce, and top with cooled filling.
  5. Roll tightly into a log shape, slice into rolls, and place in a greased baking dish. Bake for 25–30 minutes until golden.
