Ingredients

  • 1 Tbsp olive oil
  • 3 large garlic cloves, minced or pressed
  • 1 tsp paprika
  • 1 tsp dried rosemary
  • ½ tsp dried thyme
  • ¼ tsp chili flakes
  • 2 cans (15 oz each) chickpeas
  • 1 (6oz-180 grams) large potato, diced
  • 2 cups (480 ml) low-sodium vegetable broth
  • Salt & black pepper, to taste

Instructions

  1. 1. Blend one can of chickpeas (with liquid) until smooth in a blender.
  2. 2. In a large pot, heat olive oil over medium heat and sauté minced garlic until fragrant, about 1 minute.
  3. 3. Combine the blended chickpeas, drained second can of chickpeas, diced potato, paprika, rosemary, thyme, chili flakes, and freshly cracked pepper.
  4. 4. Pour in the vegetable broth and stir well to combine.
  5. 5. Cover and bring to a boil on medium-high heat; then reduce to medium-low and simmer for 25 minutes, stirring occasionally.
  6. 6. Taste and adjust seasoning with salt as needed before serving hot with a drizzle of olive oil.
