Ingredients
- 350 grams silken tofu
 - 3–4 tbsp smooth peanut butter
 - 3–4 tbsp agave syrup (or maple syrup)
 - 1 tsp vanilla extract
 - 100 grams dark chocolate
 - 400g full-fat coconut milk
 
Instructions
- In a blender, combine silken tofu, peanut butter, agave syrup, vanilla extract, and a pinch of salt. Blend until completely smooth.
 - Spoon the mixture into ramekins or jars and refrigerate while preparing the ganache.
 - Melt dark chocolate using a microwave or double boiler method. Once melted, whisk in the creamy part of coconut milk until well combined.
 - Pour the ganache over each mousse portion and allow to set in the fridge for at least one hour before serving.
