  • 810 medium shrimp, peeled & deveined
  • 1 tsp olive oil
  • 1 tsp smoked paprika
  • 1 tsp garlic powder
  • Salt & black pepper to taste
  • 1 cup corn (fresh, frozen, or canned)
  • 1 cup diced pineapple
  • 1 cup diced tomato
  • 2 tbsp diced red onion (optional)
  • 1 tbsp chopped cilantro
  • Juice of lime
  • 1 cup cooked brown rice
  • Extra cilantro for garnish

Instructions

  1. Toss shrimp with olive oil, smoked paprika, garlic powder, salt, and pepper. Sear in a hot skillet over medium heat for 2-3 minutes per side until pink and slightly charred.
  2. In a mixing bowl, combine corn, pineapple, tomato, red onion (if using), cilantro, lime juice, and salt. Toss well until all ingredients are evenly mixed. Set aside to let flavors meld.
  3. Add cooked brown rice to a plate or bowl. Arrange seared shrimp on one side and top with pineapple corn salsa on the other. Garnish with extra cilantro and a squeeze of lime juice for added zest.
