- 810 medium shrimp, peeled & deveined
- 1 tsp olive oil
- 1 tsp smoked paprika
- 1 tsp garlic powder
- Salt & black pepper to taste
- 1 cup corn (fresh, frozen, or canned)
- 1 cup diced pineapple
- 1 cup diced tomato
- 2 tbsp diced red onion (optional)
- 1 tbsp chopped cilantro
- Juice of lime
- 1 cup cooked brown rice
- Extra cilantro for garnish
Instructions
- Toss shrimp with olive oil, smoked paprika, garlic powder, salt, and pepper. Sear in a hot skillet over medium heat for 2-3 minutes per side until pink and slightly charred.
- In a mixing bowl, combine corn, pineapple, tomato, red onion (if using), cilantro, lime juice, and salt. Toss well until all ingredients are evenly mixed. Set aside to let flavors meld.
