Ingredients

  • 2 ounces achiote paste
  • 1 teaspoon Chimayo or ancho chile powder
  • 3/4 cup lime juice
  • 3-pound bone-in beef shoulder roast
  • 1 large onion, sliced (white or yellow)
  • Banana leaves (for wrapping)
  • Salt to taste
  • Optional garnish: thinly sliced red onion, roasted fresh chile salsa

Instructions

  1. In a mixing bowl, combine achiote paste, 1/2 cup lime juice, Chile powder, and salt. Mix until smooth.
  2. Line your slow cooker with banana leaves, place the beef shoulder in the center, and pour marinade over it.
  3. Scatter sliced onion on top of the meat and add 1/2 cup water around it.
  4. Fold banana leaves over the meat and cover the slow cooker. Cook on high for 6 hours or roast in an oven at 300°F for about 3 hours until fork-tender.
  5. While cooking, marinate thinly sliced red onions in remaining lime juice with a pinch of salt.
  6. Once cooked, shred the beef using forks and mix with reduced sauce from cooking.
  7. Serve tacos with marinated onions and roasted salsa on warm corn tortillas.
