Ingredients

Scale
  • 1 cup cake flour
  • 1 1/2 cups granulated sugar
  • 12 fresh large egg whites (room temperature)
  • 1 1/2 teaspoons cream of tartar
  • 1/4 teaspoon salt
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon almond extract
  • Whipped cream (for serving)
  • Fresh strawberries, sliced (for serving)

Instructions

  1. Preheat your oven to 325°F (165°C) and position the rack in the lower middle.
  2. In a mixing bowl, beat room temperature egg whites until foamy. Add cream of tartar, vanilla extract, and almond extract; continue beating on high until soft peaks form (about 5-6 minutes).
  3. Sift together cake flour, granulated sugar, and salt into another bowl five times to aerate.
  4. Gradually fold the flour mixture into the beaten egg whites one-third at a time using a rubber spatula to avoid deflating.
  5. Pour batter into an ungreased tube pan and bake for 40-45 minutes until golden brown.
  6. After baking, invert the pan over a cooling rack and cool for at least 2 hours before removing.
  7. Slice the cooled cake horizontally. Spread whipped cream between layers and top with sliced strawberries.
