Ingredients
For the Chicken:
1 pound boneless, skinless chicken breasts, cut into bite-sized pieces
1 tablespoon cornstarch
Salt and pepper, to taste
2 tablespoons vegetable oil
For the Vegetables and Base:
1 cup broccoli florets
1 bell pepper, diced (any color)
1 cup shredded carrots
2 green onions, sliced
1 cup cooked rice (white or brown)
For the Bang Bang Sauce:
1/2 cup mayonnaise
3 tablespoons sweet chili sauce
1 tablespoon sriracha sauce (adjust to taste)
1 teaspoon sesame oil
For Garnish:
Sesame seeds
Instructions
- In a medium bowl, toss the chicken pieces with cornstarch, salt, and pepper until evenly coated.
- Heat vegetable oil in a large skillet over medium-high heat. Add the chicken and cook for 5 to 7 minutes, stirring frequently, until golden brown and fully cooked. Remove from the skillet and set aside.
- In the same skillet, add broccoli, bell pepper, and shredded carrots. Stir-fry for 3 to 4 minutes until the vegetables are tender-crisp.
- In a small bowl, whisk together mayonnaise, sweet chili sauce, sriracha, and sesame oil until smooth.
- In a large bowl, combine the cooked rice, chicken, and vegetables.
- Drizzle the sauce over the mixture and toss until everything is evenly coated.
- Divide into serving bowls and garnish with sliced green onions and sesame seeds. Serve immediately.
