Description

This Bang Bang Chicken Bowl is a bold and satisfying meal featuring crispy chicken, colorful vegetables, and a creamy, spicy-sweet sauce. It’s a quick and flavorful dish perfect for easy weeknight dinners or meal prep.


Ingredients

For the Chicken:
1 pound boneless, skinless chicken breasts, cut into bite-sized pieces
1 tablespoon cornstarch
Salt and pepper, to taste
2 tablespoons vegetable oil

For the Vegetables and Base:
1 cup broccoli florets
1 bell pepper, diced (any color)
1 cup shredded carrots
2 green onions, sliced
1 cup cooked rice (white or brown)

For the Bang Bang Sauce:
1/2 cup mayonnaise
3 tablespoons sweet chili sauce
1 tablespoon sriracha sauce (adjust to taste)
1 teaspoon sesame oil

For Garnish:
Sesame seeds


Instructions

  1. In a medium bowl, toss the chicken pieces with cornstarch, salt, and pepper until evenly coated.
  2. Heat vegetable oil in a large skillet over medium-high heat. Add the chicken and cook for 5 to 7 minutes, stirring frequently, until golden brown and fully cooked. Remove from the skillet and set aside.
  3. In the same skillet, add broccoli, bell pepper, and shredded carrots. Stir-fry for 3 to 4 minutes until the vegetables are tender-crisp.
  4. In a small bowl, whisk together mayonnaise, sweet chili sauce, sriracha, and sesame oil until smooth.
  5. In a large bowl, combine the cooked rice, chicken, and vegetables.
  6. Drizzle the sauce over the mixture and toss until everything is evenly coated.
  7. Divide into serving bowls and garnish with sliced green onions and sesame seeds. Serve immediately.
