  • 8 bell peppers (halved lengthwise and seeds removed)
  • 1 cup cheddar cheese
  • 1 1/4 cups rice
  • 1 tbsp olive oil
  • 1 lb ground beef
  • 1 cup red onion (diced into 1/4-inch pieces)
  • 3 garlic cloves (minced)
  • 15 oz diced tomatoes (do not drain)
  • 4 oz green chilies
  • 1 1/4 tsp salt
  • 1 tsp pepper
  • 1/2 tsp thyme
  • 1/2 tsp smoked paprika

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. In a large skillet over medium heat, add olive oil. Sauté diced red onion and minced garlic until softened.
  3. Add ground beef to the skillet and cook until browned.
  4. Stir in cooked rice, diced tomatoes (with juices), Worcestershire sauce, green chilies, salt, pepper, thyme, and smoked paprika until well combined.
  5. Place halved bell peppers cut-side up in a baking dish and fill them generously with the beef-rice mixture.
  6. Top each pepper with additional cheddar cheese. Cover with foil and bake for 20 minutes; then remove foil and bake for an extra 10 minutes until cheese is bubbly.
