Ingredients
- 8 bell peppers (halved lengthwise and seeds removed)
- 1 cup cheddar cheese
- 1 1/4 cups rice
- 1 tbsp olive oil
- 1 lb ground beef
- 1 cup red onion (diced into 1/4-inch pieces)
- 3 garlic cloves (minced)
- 15 oz diced tomatoes (do not drain)
- 4 oz green chilies
- 1 1/4 tsp salt
- 1 tsp pepper
- 1/2 tsp thyme
- 1/2 tsp smoked paprika
Instructions
- Preheat your oven to 375°F (190°C).
- In a large skillet over medium heat, add olive oil. Sauté diced red onion and minced garlic until softened.
- Add ground beef to the skillet and cook until browned.
- Stir in cooked rice, diced tomatoes (with juices), Worcestershire sauce, green chilies, salt, pepper, thyme, and smoked paprika until well combined.
- Place halved bell peppers cut-side up in a baking dish and fill them generously with the beef-rice mixture.
