- 65 g white sugar (for filling)
- 40 g fresh lemon juice
- Zest of 1 lemon (for filling)
- 2 egg yolks (for filling)
- 2 egg whites (for meringue)
- 100 g white sugar (for meringue)
- 1/8 teaspoon salt (for meringue)
- 1 teaspoon cornstarch
- 1 teaspoon vanilla essence (for meringue)
Instructions
- Preheat your oven to 180°C (350°F) and line a baking sheet with parchment paper.
- In a bowl, cream together light brown sugar and softened butter. Mix in the egg and vanilla essence.
- In another bowl, whisk flour, baking powder, and salt; gradually add to the wet mixture until combined.
- Scoop portions of dough onto the prepared baking sheet and flatten slightly.
- For the lemon filling, melt cubed butter in a saucepan with white sugar, lemon juice, zest, egg yolks, and salt until thickened. Cool before adding to cookie bases.
- Beat egg whites until soft peaks form; gradually add white sugar until stiff peaks form. Gently mix in cornstarch and vanilla essence.
