  • 1 1/2 cups egg whites
  • 1/2 cup cottage cheese (or crumbled feta)
  • 1/4 cup shredded melting cheese
  • 1 cup cooked quinoa
  • 2 cups coarsely chopped broccoli
  • 1 tbsp onion or garlic powder
  • 1/2 tsp salt
  • 1/2 tsp ground black pepper
  • 1/8 tsp red pepper flakes
  • 1/2 cup parsley or dill (finely chopped)
  • 2 green onion sprigs (finely chopped)
  • Cooking spray

Instructions

  1. Preheat the oven to 350°F (175°C) and line a muffin tin with unbleached liners, spraying them lightly with cooking spray.
  2. In a large bowl, whisk together eggs and egg whites until well combined. Mix in cottage cheese, shredded cheese, onion or garlic powder, salt, black pepper, and red pepper flakes.
  3. Gently fold in cooked quinoa, chopped broccoli, parsley, and green onions until evenly distributed.
  4. Fill each muffin liner about three-quarters full with the egg mixture and sprinkle extra cheese on top if desired.
  5. Bake for about 20 minutes or until golden brown. Allow to cool slightly before serving.
