  • 3 tablespoons warm whole milk
  • 1 cup warm water
  • 2 ¼ teaspoons instant yeast
  • 2 ½ tablespoons granulated sugar
  • 1 large egg, slightly beaten
  • 3 cups bread flour
  • ⅓ cup all-purpose flour
  • 1 ½ teaspoons fine sea salt
  • 3 tablespoons unsalted butter, at room temperature
  • 1 large egg, beaten with 1 tablespoon water
  • Sesame seeds (optional)

Instructions

  1. In a stand mixer bowl, combine warm milk, warm water, yeast, sugar, and beaten egg until well mixed.
  2. Gradually add both flours and mix until incorporated. Add salt and room temperature butter; knead on medium-low speed for about 10 minutes until a soft dough forms.
  3. Transfer the dough to an oiled bowl, cover it with plastic wrap, and let it rise in a warm area until doubled in size (1-2 hours).
  4. Divide the dough into eight equal portions and shape each into a ball. Place on lined baking sheets to rise again until puffy (about 1 hour).
  5. Preheat the oven to 400°F. Brush each bun with an egg wash and sprinkle sesame seeds if desired before baking for 15 minutes or until golden brown.
  6. Allow to cool completely before serving or storing.
