  • 11 ½ lb skirt steak
  • ⅓ cup extra virgin olive oil
  • ⅓ cup soy sauce
  • ⅓ cup fresh lime juice
  • ¼ cup chopped cilantro
  • 3 tbsp fresh orange juice
  • 3 tbsp white vinegar
  • 3 tbsp granulated sugar
  • 1 tsp ground cumin
  • 4 minced garlic cloves
  • Salt and pepper to taste
  • 1 jalapeño chile pepper, seeded and minced

Instructions

  1. In a large Ziploc bag, whisk together the olive oil, soy sauce, lime juice, cilantro, orange juice, vinegar, sugar, cumin, garlic, and jalapeño.
  2. Add the skirt steak to the bag, ensuring it's fully coated. Seal tightly and refrigerate for at least 8 hours or overnight for best flavor.
  3. When ready to grill, remove the steak from the marinade and season both sides with salt and pepper.
  4. Preheat your grill over medium-high heat. Grill the steak until golden brown and charred on both sides (about 6-8 minutes), aiming for medium rare (145°F).
