  • 1 bunch of cilantro, chopped
  • 3 cloves garlic, minced
  • 1 tablespoon cumin
  • 1/2 tablespoon brown sugar
  • 2 tablespoons soy sauce
  • 2 limes, juiced
  • 1 tablespoon chipotle in adobo sauce
  • 23 pounds flap meat or flank steak

Instructions

  1. In a large bowl or zip lock bag, combine all marinade ingredients (cilantro, garlic, cumin, brown sugar, soy sauce, lime juice, and chipotle). Mix until well-blended.
  2. Add the flap meat or flank steak to the marinade and refrigerate for at least 4 hours or overnight for deeper flavor.
  3. Preheat your grill or grill pan to high heat.
  4. Grill the marinated meat for about 5 minutes on each side or until the desired doneness is reached (125°F for rare to 160°F for well done).
  5. Remove from heat and let rest for about 10 minutes before slicing against the grain.
