  • 1 ½ cups low carb pulled beef
  • 2 heads cauliflower (cut into florets, approx. 700 grams)
  • 2 small tomatoes (chopped)
  • 1 medium green bell pepper (chopped)
  • 2 green chilies or jalapeños (sliced)
  • 2 teaspoons low carb taco seasoning
  • ½ cup Parmesan cheese
  • 1 cup freshly grated mozzarella cheese
  • Salt and ground black pepper (to taste)
  • 2 to 3 tablespoons olive oil

Instructions

  1. Preheat your oven to 375°F (190°C) and line a baking sheet with parchment paper.
  2. Spread cauliflower florets on the baking sheet, brush with olive oil, and season with taco seasoning, salt, and pepper.
  3. Roast the cauliflower for about 5 to 7 minutes until slightly tender.
  4. Remove from the oven and top each floret with pulled beef, chopped tomatoes, bell pepper, Parmesan, mozzarella cheese, and sliced chilies.
  5. Return to the oven and bake for another 10 to 12 minutes or until the cheese is melted.
