- 1 ½ cups low carb pulled beef
- 2 heads cauliflower (cut into florets, approx. 700 grams)
- 2 small tomatoes (chopped)
- 1 medium green bell pepper (chopped)
- 2 green chilies or jalapeños (sliced)
- 2 teaspoons low carb taco seasoning
- ½ cup Parmesan cheese
- 1 cup freshly grated mozzarella cheese
- Salt and ground black pepper (to taste)
- 2 to 3 tablespoons olive oil
Instructions
- Preheat your oven to 375°F (190°C) and line a baking sheet with parchment paper.
- Spread cauliflower florets on the baking sheet, brush with olive oil, and season with taco seasoning, salt, and pepper.
- Roast the cauliflower for about 5 to 7 minutes until slightly tender.
- Remove from the oven and top each floret with pulled beef, chopped tomatoes, bell pepper, Parmesan, mozzarella cheese, and sliced chilies.
- Return to the oven and bake for another 10 to 12 minutes or until the cheese is melted.
