  • 4 cups spring mix greens
  • 1½ cups blueberries (fresh)
  • ½ cup crumbled feta cheese
  • ½ cup chopped red onion
  • 1 cup chopped cucumber
  • ½ cup dried cranberries
  • 6 tablespoons olive oil
  • ¼ cup balsamic vinegar
  • ½ clove garlic (minced)
  • 1 tablespoon honey
  • ¼ teaspoon salt
  • ⅛ teaspoon pepper

Instructions

  1. For the vinaigrette: Whisk together olive oil, balsamic vinegar, minced garlic, honey, salt, and pepper in a bowl until combined. Set aside.
  2. Grill the chicken seasoned with salt and pepper over high heat for 6-8 minutes per side until cooked through (165°F). Allow to rest before slicing.
  3. In a large bowl, combine spring mix greens, blueberries, cranberries, red onion, cucumber, and feta cheese. Top with sliced grilled chicken.
