  • 2 tbsp canola oil
  • 1 large white onion (diced)
  • 4 garlic cloves (minced)
  • 8 oz tomato sauce
  • 7 oz chipotle peppers in adobo sauce
  • 2 lbs cherries (pitted and chopped)
  • 1/2 cup dark brown sugar
  • 1/2 cup molasses
  • 1/4 cup apple cider vinegar
  • 1 tbsp ground mustard
  • 1 tsp ground cumin
  • 1 tsp ground pepper
  • 1 tsp smoked paprika
  • 1/2 tsp ground cinnamon

Instructions

  1. Heat canola oil in a heavy-bottomed pot over medium heat. Sauté diced onion with kosher salt until translucent, then add minced garlic and grated ginger.
  2. Stir in tomato sauce, chipotle peppers, and chopped cherries. Mix well and bring to a low boil.
  3. Add remaining ingredients and let simmer for at least 30 minutes to develop flavors.
  4. Use an immersion blender to puree the sauce until smooth. If it’s too thick, gradually add water or broth until desired consistency is achieved.
  5. Serve immediately or store in airtight containers in the fridge for up to one week.
