  • 2 skinless boneless chicken breasts
  • 2 tablespoons lemon-pepper seasoning
  • 1 teaspoon salt
  • 2 tablespoons extra virgin olive oil
  • 1/2 medium size onion, diced
  • 1/2 cup chicken broth
  • 4 cloves garlic, minced
  • 1/2 cup heavy cream
  • 1/2 cup grated Parmesan cheese
  • 2 tablespoons fresh basil (julienned)
  • 2 cups baby spinach
  • 5 sun-dried tomatoes, cut into julienne strips
  • 1 teaspoon arrowroot powder (optional)

Instructions

  1. Season chicken breasts with lemon-pepper seasoning and salt on both sides.
  2. Heat olive oil in a large skillet over medium heat. Cook the seasoned chicken for about 10-12 minutes on each side until golden brown and cooked through (internal temperature should reach 165°F). Remove from skillet and set aside.
  3. In the same skillet, sauté diced onions until translucent (3-5 minutes). Add minced garlic and cook until fragrant (about 1 minute).
  4. Pour in chicken broth, heavy cream, grated Parmesan cheese, and fresh basil. Stir continuously until melted.
  5. Add spinach and sun-dried tomatoes to the sauce; simmer for 2-3 minutes until spinach wilts.
  6. Return the cooked chicken to the skillet, coating it with sauce before serving.
