  • 1 lb thinly sliced beef (flank or sirloin)
  • 1 cup sliced bell peppers (red and green)
  • 1 medium onion, sliced
  • 8 oz cream cheese (softened)
  • 1 cup shredded provolone cheese
  • 1 cup beef broth
  • 23 cloves garlic, minced
  • 1 tbsp olive oil
  • Salt and pepper to taste

Instructions

  1. Boil water in a large pot and cook the tortellini according to package instructions until al dente. Drain and set aside.
  2. In a large skillet, heat olive oil over medium heat. Add the thinly sliced beef, season with salt and pepper, and cook until browned (about 5-7 minutes). Remove from skillet and set aside.
  3. In the same skillet, add sliced onions and bell peppers. Sauté until softened (about 4-5 minutes), then stir in minced garlic for another minute.
  4. Add softened cream cheese to the skillet with vegetables; stir until melted. Gradually pour in beef broth while stirring continuously, then mix in shredded provolone cheese until smooth.
  5. Return cooked beef to the skillet along with drained tortellini. Toss gently until well coated in sauce.
  6. Taste and adjust seasoning if necessary. Serve hot, garnished with additional provolone if desired.
