  • 900 g sliced eggplants
  • 400 g sliced zucchinis
  • Sliced yellow bell pepper
  • Sliced red bell pepper
  • 3 tbsp olive oil
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1 tsp dried oregano
  • 1 tsp garlic powder
  • 2 tbsp butter
  • 2 tbsp all-purpose flour
  • 1.5 cups milk
  • 1/2 cup heavy cream
  • 1/2 cup shredded mozzarella
  • 1/2 cup shredded parmesan
  • 1/2 cup ricotta cheese
  • 1 tsp minced garlic
  • 1 tsp dried basil
  • 1 tsp dried parsley
  • Salt & pepper to taste
  • 9 sheets lasagna sheets (cooked)
  • Extra mozzarella for topping (optional)

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. In a large bowl, mix sliced vegetables with olive oil and seasonings. Roast on a baking sheet for 20 minutes until tender.
  3. For the cheese sauce: melt butter in a saucepan; whisk in flour and gradually add milk and cream until smooth. Stir in cheeses and herbs until melted.
  4. In a baking dish, layer cheese sauce, lasagna sheets, roasted vegetables, and repeat layers.
  5. Cover with foil and bake for 30 minutes; remove foil and bake an additional 10 minutes until golden.
  6. Let cool slightly before slicing to serve.
