- 1/2 pound pasta of choice
- 1 cup pitted large green olives (roughly chopped)
- 100 g feta cheese, cubed
- 1/3 cup extra virgin olive oil
- 1/4 cup olive brine
- 1 clove fresh minced garlic
- 1 lemon (zest and juice)
- Black pepper to taste
Instructions
- Cook pasta in boiling salted water until al dente. Drain and rinse with cold water.
- In a mason jar, combine olive oil, olive brine, minced garlic, lemon zest, lemon juice, and black pepper. Shake until mixed.
- In a mixing bowl, combine cooked pasta, chopped olives, and feta cheese. Pour dressing over the salad and toss gently to coat.
- Taste and adjust seasoning if needed; chill for 30 minutes before serving.
