  • ¾ teaspoon espresso powder
  • ½ cup neutral oil
  • 1 cup brown sugar
  • ⅓ cup granulated sugar
  • 2 large eggs (room temperature)
  • 1 cup sour cream (room temperature)
  • ½ teaspoon baking powder
  • 1 teaspoon baking soda
  • 1 tsp kosher salt
  • 1 ¾ cups flour
  • ¾ cup Dutch processed cocoa powder
  • ¾ cup semisweet chocolate chips
  • 1 cup fresh strawberries (chopped)

Instructions

  1. Whisk hot water with espresso powder until dissolved.
  2. In a mixing bowl, combine eggs, oil, sour cream, hot coffee mixture, brown sugar, and granulated sugar until smooth.
  3. Add flour, cocoa powder, baking soda, baking powder, and salt; stir until just combined.
  4. Gently fold in chocolate chips and chopped strawberries.
  5. Cover and let batter rest for 30-60 minutes.
  6. Preheat oven to 425°F (220°C) and line muffin pans with liners (every other hole).
  7. Fill each muffin cup until slightly over ¾ full.
  8. Bake at 425°F for 5 minutes; reduce temperature to 350°F (175°C) and bake for an additional 18-23 minutes or until a toothpick comes out clean.
  9. Cool in the pan for about 10 minutes before transferring to a wire rack.
