Ingredients
- 6 oz uncooked mini pasta shells
- 2 mini cucumbers, sliced
- 1 cup cherry tomatoes, halved
- 4 oz colby jack cheese, cubed
- 3 Tbsp red onion, finely chopped
- 8 oz turkey bacon, cooked
- 2/3 cup mayonnaise
- 1/4 cup grated parmesan cheese
- 2 Tbsp sour cream
- 1/4 cup whole milk
- 3 garlic cloves, minced
- 2 Tbsp lemon juice
- 1 Tbsp olive oil
- Salt and pepper to taste
Instructions
- Cook the mini pasta shells according to package instructions; drain and rinse under cold water.
- In a bowl, whisk together mayonnaise, parmesan cheese, sour cream, milk, garlic, lemon juice, olive oil, salt, and pepper until smooth.
- Prepare turkey bacon until crispy and cut into pieces.
- Slice cucumbers and halve cherry tomatoes while finely chopping red onion.
- In a large bowl, combine cooled pasta with vegetables, cheese cubes, and turkey bacon. Pour dressing over and mix well.
