Ingredients
- 2 cups sugar
- 1 cup softened butter
- 3 large eggs
- 2 1/2 cups cake flour
- 1 cup baking cocoa (sifted)
- 2 1/4 cups buttermilk
- 1 cup semi-sweet chocolate chips
- 1/2 cup water
- 1/2 cup butter for ganache
- 1 teaspoon vanilla for ganache
- 3 1/2 cups powdered sugar for ganache
Instructions
- Preheat your oven to 350°F (175°C). Grease and flour round baking pans.
- In a bowl, whisk together the cake flour, cocoa, baking soda, salt, and pudding mix.
- In another bowl, cream the softened butter and sugar until fluffy. Add eggs one at a time and stir in vanilla.
- Gradually combine the dry mixture with buttermilk until just mixed.
- Divide batter into pans and bake for 30-35 minutes or until a toothpick comes out clean.
- Cool cakes and prepare ganache by melting chocolate chips with water and butter over medium heat. Stir in vanilla and powdered sugar until smooth.
- Once cakes are cool, layer them with ganache in between and frost the top and sides.
