  • 1 box of puff pastry dough (2 sheets), thawed
  • 3 tablespoons melted butter, for brushing
  • Sanding sugar
  • 1 8-ounce block of cream cheese
  • 1 tablespoon sour cream
  • 3 tablespoons granulated sugar
  • 2 teaspoons lime juice, freshly squeezed or bottled
  • Lime zest from one whole lime
  • 21/2 teaspoons vanilla extract
  • Fresh blueberries, rinsed and dried
  • Fresh strawberries, stems removed and cut in half
  • Optional garnish: additional lime zest

Instructions

  1. Preheat your oven to 400°F and line baking sheets with parchment paper.
  2. Roll out thawed puff pastry on a floured surface and cut into circles using a biscuit cutter.
  3. Mix cream cheese, sour cream, sugar, lime juice, lime zest, and vanilla in a stand mixer until smooth.
  4. Place the cream cheese mixture in the center of each pastry round and top with fresh fruit.
  5. Bake for 15-16 minutes until golden brown. Allow to cool before serving.
