Ingredients
- 1 box of puff pastry dough (2 sheets), thawed
- 3 tablespoons melted butter, for brushing
- Sanding sugar
- 1 8-ounce block of cream cheese
- 1 tablespoon sour cream
- 3 tablespoons granulated sugar
- 2 teaspoons lime juice, freshly squeezed or bottled
- Lime zest from one whole lime
- 2–1/2 teaspoons vanilla extract
- Fresh blueberries, rinsed and dried
- Fresh strawberries, stems removed and cut in half
- Optional garnish: additional lime zest
Instructions
- Preheat your oven to 400°F and line baking sheets with parchment paper.
- Roll out thawed puff pastry on a floured surface and cut into circles using a biscuit cutter.
- Mix cream cheese, sour cream, sugar, lime juice, lime zest, and vanilla in a stand mixer until smooth.
- Place the cream cheese mixture in the center of each pastry round and top with fresh fruit.
- Bake for 15-16 minutes until golden brown. Allow to cool before serving.
