  • 4 cups shredded romaine lettuce
  • 1 cup sliced red onion
  • 1/2 cup feta
  • 1 cup plain Greek yogurt
  • 1/2 cup grated cucumber
  • 1 tablespoon olive oil (for tzatziki)
  • 1 teaspoon minced garlic (for tzatziki)
  • 1/4 teaspoon salt (for tzatziki)
  • 1 tablespoon fresh chopped dill

Instructions

  1. In a mixing bowl, whisk together olive oil, lemon zest, lemon juice, honey, garlic powder, dried oregano, dried basil, salt, black pepper, and red pepper flakes.
  2. Pound chicken breasts to ½ inch thick and marinate in the mixture for at least 30 minutes.
  3. For the tzatziki sauce, combine Greek yogurt, grated cucumber, olive oil, minced garlic, salt, and chill until ready to serve.
  4. Cook rice or quinoa as per instructions; chop vegetables while they cook.
