Ingredients
- 20 ounces fresh cheese tortellini
- 1 ½ cups cherry tomatoes
- 1 ½ cups cucumbers
- 1 cup canned artichoke hearts
- 1 cup olives
- ½ red onion
- 1 cup crumbled feta cheese
- ½ cup olive oil
- ⅓ cup red apple vinegar
- 3–4 tablespoons white sugar
- 2 teaspoons Dijon mustard
- 3 teaspoons minced garlic
- 2 teaspoons dried oregano
- 2 teaspoons dried basil
- 1 teaspoon salt
- Juice of 1 lemon
- Pinch of red pepper (optional)
Instructions
- Cook the tortellini according to package directions until al dente; drain and let cool.
- In a small bowl, whisk together olive oil, red apple vinegar, sugar, Dijon mustard, minced garlic, oregano, basil, salt, and lemon juice.
- In a large mixing bowl, combine cooked tortellini with cherry tomatoes, cucumbers, artichokes, olives, red onion, and half of the feta cheese.
- Pour the dressing over the mixture and toss gently until well combined.
- Top with remaining feta and chopped dill; cover and chill in the refrigerator for at least 2 hours before serving.
