Ingredients

  • 1012 organic lemons (zest only)
  • 750 ml high-proof lemon juice (or non-alcoholic alternative)
  • 4 cups water
  • 3 cups sugar

Instructions

  1. Wash and dry the lemons thoroughly. Peel only the yellow zest using a vegetable peeler, avoiding the white pith.
  2. Place the lemon peels in a large glass jar and pour in the high-proof lemon juice. Seal tightly and store in a cool, dark place. Shake every few days and let infuse for 7–30 days.
  3. Make the simple syrup by combining water and sugar in a saucepan over medium heat until sugar is dissolved. Cool completely.
  4. Strain out lemon peels using a fine mesh strainer from the infused liquid.
  5. Mix the cooled simple syrup with the infused lemon juice to achieve your desired sweetness.
  6. Pour into clean glass bottles and let rest in a cool dark place for at least one week before serving.
