Instructions
- Wash and dry the lemons thoroughly. Peel only the yellow zest using a vegetable peeler, avoiding the white pith.
- Place the lemon peels in a large glass jar and pour in the high-proof lemon juice. Seal tightly and store in a cool, dark place. Shake every few days and let infuse for 7–30 days.
- Make the simple syrup by combining water and sugar in a saucepan over medium heat until sugar is dissolved. Cool completely.
- Strain out lemon peels using a fine mesh strainer from the infused liquid.
- Mix the cooled simple syrup with the infused lemon juice to achieve your desired sweetness.
- Pour into clean glass bottles and let rest in a cool dark place for at least one week before serving.
