Ingredients

  • 2 cups warm water
  • 1 packet instant yeast (2 1/4 teaspoons)
  • 1 tablespoon molasses or honey
  • 5 1/2 cups all-purpose flour
  • 1 teaspoon kosher salt
  • 6 tablespoons salted butter (room temperature)
  • 1/4 cup baking soda
  • 1 egg (beaten)
  • Pretzel salt or flaky sea salt

Instructions

  1. In a stand mixer bowl with a dough hook, mix warm water, yeast, molasses, flour, kosher salt, and 2 tablespoons of softened butter until the dough forms.
  2. Knead for about 1-2 minutes; cover and let rise in a warm place for 1-2 hours until doubled.
  3. Preheat oven to 425°F (220°C) and line two baking sheets with parchment paper.
  4. Punch down the dough on a floured surface; divide into 10-12 balls. Poke holes in each ball to form bagels and stretch slightly.
  5. Cover formed bagels with a damp towel for about 15 minutes.
  6. Boil water in a large pot; add baking soda. Boil bagels in batches for 3 minutes on one side and then flip to boil for another 1-2 minutes.
  7. Place boiled bagels on prepared sheets; brush with beaten egg and sprinkle salt before baking.
  8. Bake for approximately 10 minutes, then brush with remaining melted butter and bake for an additional 10-15 minutes until golden.
