- 2 cups warm water
- 1 packet instant yeast (2 1/4 teaspoons)
- 1 tablespoon molasses or honey
- 5 1/2 cups all-purpose flour
- 1 teaspoon kosher salt
- 6 tablespoons salted butter (room temperature)
- 1/4 cup baking soda
- 1 egg (beaten)
- Pretzel salt or flaky sea salt
Instructions
- In a stand mixer bowl with a dough hook, mix warm water, yeast, molasses, flour, kosher salt, and 2 tablespoons of softened butter until the dough forms.
- Knead for about 1-2 minutes; cover and let rise in a warm place for 1-2 hours until doubled.
- Preheat oven to 425°F (220°C) and line two baking sheets with parchment paper.
- Punch down the dough on a floured surface; divide into 10-12 balls. Poke holes in each ball to form bagels and stretch slightly.
- Cover formed bagels with a damp towel for about 15 minutes.
