  • 1 tablespoon oil
  • 1 pound boneless, skinless chicken breast (diced into about 1 inch pieces)
  • Salt & pepper
  • 1 onion (cut into thin wedges)
  • 1 can (8oz) pineapple chunks or tidbits packed in juice, NOT drained
  • 1/2 cup BBQ sauce
  • 1 red pepper (diced)
  • 1 yellow pepper (diced)
  • 1 cup white rice
  • 1 cup water
  • 1 teaspoon oil
  • 1/4 teaspoon salt
  • 1/2 cup BBQ sauce
  • 2 teaspoons cornstarch
  • 2 tablespoons water

Instructions

  1. Set the Instant Pot to sauté mode, add oil, diced chicken, salt, and pepper; brown for about 5 minutes. Add onion and cook for an additional minute.
  2. Stir in pineapple (with juice), BBQ sauce, and diced peppers; mix well.
  3. Place a trivet over the mixture. In an oven-proof dish, combine rice, water, oil, and salt; place it on the trivet.
  4. Close the lid, set to sealing, and pressure cook on high for 2 minutes. Allow natural pressure release for 10 minutes before manually releasing any remaining pressure.
  5. Remove the rice dish and trivet carefully. Fluff rice with a fork.
  6. For thickening sauce: Mix remaining BBQ sauce with cornstarch and water until smooth, then simmer in the Instant Pot until thickened (about 1 minute). Serve over rice.
