  • 1 large egg
  • 1/2 cup Greek yogurt
  • 1 tsp baking powder
  • 1/4 tsp salt
  • 1/4 cup melted unsalted butter
  • 1/4 cup vegetable oil
  • 1/4 cup packed light brown sugar
  • 1/2 tsp vanilla extract
  • 1 tsp cornstarch
  • 3/4 cup powdered sugar
  • 1 1/2 to 2 1/2 tsp milk or cream

Instructions

  1. Preheat your oven to 350°F (175°C) and prepare a muffin tin with liners.
  2. In one bowl, mix together the flour, baking powder, salt, and sugars. In another bowl, whisk together melted butter, vegetable oil, egg, vanilla extract, and Greek yogurt until smooth.
  3. Combine wet ingredients with the dry mixture until just blended. Gently fold in blueberries tossed with flour.
  4. For the cream cheese filling, beat softened cream cheese with sugar until smooth, adding cornstarch and vanilla extract.
  5. Spoon half the batter into each muffin cavity; add a dollop of cream cheese filling on top; cover with remaining batter and sprinkle more blueberries.
  6. Bake for about 22 minutes until golden brown. Allow cooling before serving.
