Ingredients

  • 4 chicken thighs, diced (about 1.5 pounds)
  • 1 tablespoon taco seasoning
  • 1/4 cup diced onion
  • 1 (4.5 oz) can diced green chilis
  • 1/2 cup salsa
  • 1/4 cup chicken broth
  • 1 cup diced zucchini
  • 1 (10 oz) package frozen cauliflower rice
  • 1 cup shredded Mexican blend cheese
  • Salt and pepper to taste

Instructions

  1. Gather all ingredients and dice the chicken thighs and zucchini.
  2. In the Instant Pot, add diced chicken, taco seasoning, onion, green chilis, salsa, chicken broth, zucchini, and cauliflower rice. Mix well.
