  • 2 large cabbages
  • 2 pounds ground beef
  • 1 cup Arborio rice
  • 1 onion, finely chopped
  • ½ cup chopped parsley
  • ½ cup freshly squeezed lemon juice
  • 3 egg yolks
  • 56 cups chicken broth
  • 1/41/2 cup olive oil
  • 1/4 cup water (or more)
  • 1 heaping teaspoon dried dill
  • 1 teaspoon salt, or to taste
  • Black pepper, to taste
  • 2 tablespoons cornstarch

Instructions

  1. Prepare the cabbage leaves by boiling them until tender (10-15 minutes) and set aside to drain.
  2. In a food processor, finely chop half of the onion with parsley, then mix with ground beef, rice, olive oil, salt, pepper, and enough water for moisture.
  3. Assemble each roll by placing filling in the center of a cabbage leaf and rolling tightly.
  4. Layer rolls in a pot and cover with chicken broth or water; simmer for 30-45 minutes.
  5. For the egg lemon sauce, whisk together egg yolks and lemon juice; temper with hot broth before mixing back into the pot.
  6. Gently heat everything together for five minutes before serving.
