  • 6 pounds Yukon Gold potatoes (peeled and cut into chunks)
  • 2 cups sour cream
  • 3/4 cup reserved starchy potato water
  • 1 teaspoon black pepper
  • 6 tablespoons finely chopped chives
  • ⅔ cup panko bread crumbs
  • ⅔ cup grated Parmigiano-Reggiano cheese

Instructions

  1. Grease a 9-inch-by-13-inch baking pan with butter.
  2. Boil salted water in a large pot and cook the Yukon Gold potatoes until fork-tender (about 20 minutes). Drain, reserving 1 cup of potato water.
  3. In a mixing bowl, mash the potatoes with butter and sour cream. Gradually mix in reserved starch water until creamy. Season with salt, pepper, and stir in chives.
  4. Spread the mixture into the prepared pan and refrigerate for up to three days.
  5. For topping, melt remaining butter and mix with panko and cheese. Refrigerate until needed.
  6. Preheat the oven to 400°F, sprinkle topping over the mashed potatoes, and bake uncovered for 30–40 minutes until golden.
