  • ½ cup ripe mango puree
  • ½ cup Greek yogurt
  • 1 cup unsalted butter (softened)

  • 2 tbsp mango puree
  • 2 tbsp strawberry puree
  • 1 tsp baking powder
  • ½ tsp baking soda
  • ¼ tsp salt
  • 2 large eggs
  • 1 tsp vanilla extract
  • ¼ cup mango juice
  • 3 tbsp heavy cream
  • Orange (pink, yellow gel colors)

Instructions

  1. Preheat the oven to 350°F (175°C) and line a muffin tin with cupcake liners.
  2. In one bowl, whisk together flour, baking powder, baking soda, and salt.
  3. In another bowl, cream softened butter and sugar until light and fluffy.
  4. Mix in eggs one at a time, then add vanilla extract, mango puree, Greek yogurt, and mango juice until combined.
  5. Gradually incorporate dry ingredients into the wet mixture without overmixing.
  6. Fill cupcake liners two-thirds full with batter and bake for approximately 18 minutes or until a toothpick comes out clean.
  7. Allow cupcakes to cool completely before frosting.
  8. For frosting, beat softened butter with powdered sugar, then add heavy cream and fruit purees until smooth. Decorate cooled cupcakes as desired.
