  • 1/2 cup red onion (finely chopped)
  • 1 cup cherry tomatoes (halved)
  • 1 cucumber (diced)
  • 1/2 cup Kalamata olives (pitted and halved)
  • 4 ounces feta cheese (crumbled)
  • Fresh parsley and mint (chopped)
  • Olive oil
  • Lemon juice
  • Garlic
  • Dried oregano

Instructions

  1. Rinse and drain chickpeas thoroughly; pat dry.
  2. Chop the red onion finely. Halve the cherry tomatoes, dice the cucumber, and slice the Kalamata olives.
