- 3 cups cooked Campanelle, rotini, or farfalle pasta
- 2 cups kale, stems removed and roughly chopped
- 1/2 cup crumbled feta cheese

- 1/4 cup sliced sun-dried tomatoes
- 1/4 cup olive oil
- 2 tablespoons basil paste or pesto
- 2–3 tablespoons white balsamic vinegar
- 1 tablespoon minced garlic
- 1 teaspoon Italian seasoning
- Salt and pepper to taste
Instructions
- Prepare the kale by removing tough stems and tearing leaves into bite-sized pieces. Massage with olive oil for tenderness.
- For the dressing, mix olive oil, basil paste or pesto, vinegar, garlic, Italian seasoning, salt, and pepper in a small bowl until well combined.
