  • 4 flour or corn tortillas
  • 2 cups fresh spinach, roughly chopped
  • 1 cup crumbled feta cheese
  • 1 cup shredded mozzarella cheese
  • 1 tablespoon olive oil or butter
  • Salt and pepper to taste
  • Optional: Fresh basil or oregano

Instructions

  1. Prepare the filling by washing and chopping the spinach. In a mixing bowl, combine chopped spinach with feta, mozzarella, olive oil (or butter), salt, and pepper; mix well.
  2. Heat your skillet over medium heat.

  4. Cook for about 3–4 minutes until golden brown on one side; carefully flip using a spatula and cook until the other side is golden brown as well.
  5. Remove from skillet, slice into wedges, and serve warm.
