Ingredients
- 16 oz frozen chopped spinach (thawed and squeezed dry)
- 1 cup crumbled feta cheese
- 1/2 cup ricotta cheese
- 1/4 cup fresh dill (finely chopped)
- 1/4 cup green onions (finely chopped)
- 1 large egg (lightly beaten)
- 1 package phyllo dough
- Melted butter
Instructions
- Preheat oven to 375°F (190°C) and line baking sheets with parchment paper.
- In a large bowl, mix together thawed spinach, feta, ricotta, dill, green onions, egg, nutmeg, and black pepper until combined.
- Unroll phyllo dough and keep it covered with a damp towel. Brush one sheet lightly with melted butter; layer another on top and brush again.
- Cut into strips; place 1 tablespoon filling on one end of each strip. Fold into triangles until you reach the end.
- Place seam-side down on baking sheets; brush tops with remaining butter. Bake for 15-20 minutes until golden brown.
- While baking, whisk together Greek yogurt and lemon juice for dipping.
