  • 16 oz frozen chopped spinach (thawed and squeezed dry)
  • 1 cup crumbled feta cheese
  • 1/2 cup ricotta cheese
  • 1/4 cup fresh dill (finely chopped)
  • 1/4 cup green onions (finely chopped)
  • 1 large egg (lightly beaten)
  • 1 package phyllo dough
  • Melted butter

Instructions

  1. Preheat oven to 375°F (190°C) and line baking sheets with parchment paper.
  2. In a large bowl, mix together thawed spinach, feta, ricotta, dill, green onions, egg, nutmeg, and black pepper until combined.
  3. Unroll phyllo dough and keep it covered with a damp towel. Brush one sheet lightly with melted butter; layer another on top and brush again.
  4. Cut into strips; place 1 tablespoon filling on one end of each strip. Fold into triangles until you reach the end.
  5. Place seam-side down on baking sheets; brush tops with remaining butter. Bake for 15-20 minutes until golden brown.
  6. While baking, whisk together Greek yogurt and lemon juice for dipping.
