- 4 medium sweet potatoes

- 1 cup canned chickpeas
- 1/4 cup Kalamata olives
- 2 tablespoons extra virgin olive oil
- 1 tablespoon lemon juice

Instructions
- Preheat oven to 400°F (200°C) and line a baking sheet with parchment paper.
- Prick sweet potatoes several times with a fork, place them on the baking sheet, and bake for 40 to 50 minutes until fork-tender.
