  • 2 boxes white cake mix (plus ingredients as per package)
  • 1 pack (3 oz) lime jello
  • 1 cup shredded coconut
  • 1 teaspoon coconut extract
  • 1 tub (16 oz) key lime frosting
  • 1 cup toasted coconut (for topping)
  • Zest of 2 limes

Instructions

  1. Preheat your oven to 350°F (175°C) and spray a mini bundt cake pan with non-stick cooking spray.
  2. Prepare both boxes of cake mix according to package instructions, dividing the batter into two bowls.
  3. In one bowl, mix in shredded coconut, coconut extract, and green sprinkles. In the other bowl, stir in dry lime jello.
  4. Fill each mini bundt well with 1/3 cup of coconut batter followed by 1/4 cup of lime batter.
  5. Bake for about 22 minutes or until a toothpick comes out clean.
  6. Cool for 20 minutes in the pan before transferring to a wire rack.
  7. Melt key lime frosting in the microwave and drizzle over cooled cakes. Garnish with toasted coconut and lime zest.
