  • 5 TBSP Unsalted butter
  • 1/3 cup Oil (canola or vegetable)
  • 1 tsp Pure vanilla extract
  • 1/2 cup All-purpose flour
  • 3/4 cup Unsweetened cocoa powder (dutch process)
  • 1 TBSP Cornstarch
  • 1/4 tsp Salt
  • 1/2 cup Semi-sweet chocolate chips
  • 1/2 cup Milk chocolate chips
  • 1/2 cup All-purpose flour (for topping)
  • 1 tsp Cornstarch (for topping)
  • 1/2 tsp Baking soda
  • 1/8 tsp Baking powder
  • 1/4 tsp Salt (for topping)
  • 1/4 cup Unsalted butter (room temperature, for topping)
  • 1/3 cup Brown sugar (packed light or dark, for topping)
  • 1/8 cup White granulated sugar (for topping)
  • 1/4 cup Peanut butter (creamy, for topping)
  • 1 tsp Pure vanilla extract (for topping)
  • 1 Large egg (room temperature, for topping)
  • 1/2 cup Quick oats (for topping)
  • 1/2 cup Mini chocolate chips (for topping)
  • 1/2 cup Mini M&Ms (for topping)

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a large mixing bowl, combine the white granulated sugar, unsalted butter, oil, eggs, egg yolk, and pure vanilla extract. Mix until well blended.
  3. In another bowl, whisk together all-purpose flour, cocoa powder, cornstarch, and salt.
  4. Gradually add dry ingredients to the wet mixture. Stir until just combined.
  5. Fold in semi-sweet and milk chocolate chips.
  6. Pour brownie batter into a greased 9×13 inch baking pan. Spread it evenly using a rubber spatula. Bake in preheated oven for about 25 minutes.
  7. In a separate bowl, mix together all-purpose flour, cornstarch, baking soda, baking powder, and salt.
  8. In another bowl, cream together room temperature unsalted butter, brown sugar, white granulated sugar, peanut butter, pure vanilla extract, and egg until smooth.
  9. Gradually add the dry mixture into the wet mixture until fully incorporated.
  10. Stir in quick oats, mini chocolate chips, and mini M&Ms.
  11. Once brownie layer is baked, spoon dollops of monster cookie batter over the brownie layer.
  12. Spread gently with a spatula to cover as much as possible without mixing layers.
  13. Return to oven for an additional 15-20 minutes until edges are set but center remains soft.
  14. Allow brownies to cool completely in the pan before cutting into bars.
