  • 1 jar (16 ounces) roasted red peppers, drained
  • 1/2 cup oil-packed sun-dried tomatoes, drained
  • 1/4 cup extra virgin olive oil
  • 2 teaspoons honey
  • 4 cloves garlic, smashed
  • 2 tablespoons lemon juice
  • 2 small potatoes, very thinly sliced
  • 4 (6-8 ounce) salmon fillets
  • Fresh dill and basil for garnish

Instructions

  1. Preheat oven to 425°F.
  2. In a blender, combine the roasted red peppers, sun-dried tomatoes, olive oil, honey, garlic, lemon juice, smoked paprika, cumin, red pepper flakes, salt, and pepper. Blend until smooth.
  3. On each piece of parchment paper, layer thinly sliced potatoes and season with salt and pepper. Place one salmon fillet on top and spoon sauce over it.
  4. Seal the parchment packets tightly, place them on a baking sheet, and bake for 15-20 minutes until the potatoes are tender.
  5. Serve hot with tzatziki sauce topped with fresh dill and basil.
