  • 1 tsp baking powder
  • 1/4 tsp salt
  • 1 and 1/2 tsp cinnamon
  • 1/2 tsp nutmeg
  • 1/2 cup granulated sugar
  • 2 tsp cinnamon
  • 1/8 tsp nutmeg
  • 1/4 cup salted butter, melted
  • 1/3 cup light brown sugar, packed
  • 1/2 cup + 1 tbsp all-purpose flour
  • 3/4 tsp cinnamon
  • 1/3 cup powdered sugar
  • 1/4 tsp vanilla extract
  • pinch of cinnamon
  • 12 tbsp milk

Instructions

  1. Prepare the peach filling by cooking diced peaches with sugars and spices in a saucepan until bubbly. Thicken with cornstarch mixture, then cool.
  2. For the cookie dough, cream butter and sugars; add eggs and vanilla. Gradually incorporate dry ingredients to form the dough. Chill for at least 30 minutes.
  3. Scoop chilled dough into balls and chill again for optimal structure.
  4. Make the streusel topping by mixing melted butter with sugars and flour, then bake until golden brown.
