- 1 ¾ cups graham cracker crumbs
- 1/4 cup roasted peanuts (finely crushed)
- 1/3 cup brown sugar
- 1 teaspoon kosher salt (divided)
- 2 pounds (four 8-ounce boxes) cream cheese (softened)
- 1 cup creamy peanut butter
- 1 cup sugar
- 4 large eggs
- 1 teaspoon vanilla extract
- 1 cup Concord grape jelly
Instructions
- Preheat the oven to 350°F (175°C) and prepare a 9 x 13-inch baking pan with cooking spray.
- In a mixing bowl, combine graham cracker crumbs, crushed peanuts, brown sugar, and salt. Add melted butter and mix until it resembles wet sand. Press into the bottom of the pan and bake for 12-15 minutes until set. Allow cooling.
- Set the oven to 325°F (160°C). In an electric mixer, beat softened cream cheese and peanut butter until smooth. Gradually add sugar and salt, then mix in eggs one at a time followed by vanilla extract. Pour over cooled crust.
- Bake for 40-45 minutes until slightly puffed around edges but still wobbly in the center. Cool completely.
- In a saucepan over medium heat, melt grape jelly until smooth, then pour over cheesecake layer once cooled.
- Refrigerate for at least 2 hours before cutting into bars.
