  • 2 packages yeast (4 1/2 teaspoons), dissolved in 1 cup lukewarm water
  • 6 tablespoons shortening or unsalted butter
  • 1 cup granulated sugar
  • 9 cups unbleached all-purpose flour
  • 2 cups hot water
  • 2 eggs (beaten)
  • 1 tablespoon salt
  • 1/2 cup softened butter
  • 3 1/2 cups raspberries
  • 4 ounces cream cheese (at room temperature)
  • 1 cup powdered sugar

Instructions

  1. Prepare the yeast mixture by dissolving it in lukewarm water for five minutes.
  2. Combine shortening, sugar, and salt with hot water in a stand mixer. Let cool to lukewarm before adding flour and yeast mixture.
  3. Mix in beaten eggs and knead until smooth.
  4. Allow dough to rise until doubled in size (about 30 minutes).
  5. Roll out dough, add filling of raspberries mixed with sugar and zest, then roll into a log and cut into pieces.
  6. Place rolls in a greased baking pan and let rise again until doubled (about an hour).
  7. Bake at 350°F for 25–32 minutes until golden brown.
  8. While cooling, prepare frosting by mixing cream cheese, butter, powdered sugar, and lemon zest until smooth; spread on warm rolls.
